Chunky Peanut Butter Chocolate Chip Cookies

I am not a baker. I don't much care for sweets. But. If you're going to have a cookie, have one of these.
Ingredients
- 8 T salted butter (1 stick), softened
- 1 large egg, room temperature (leave it out with the butter)
- 1 1/3 C all-purpose flour
- 1/2 tsp baking soda
- 1/8 tsp cayenne pepper
- 1/8 tsp cinnamon
- 1/2 C granulated sugar
- 1/2 C packed brown sugar
- 3/4 tsp kosher salt
- 1 tsp vanilla extract
- 2/3 C chunky peanut butter (spray a measuring cup with non-stick cooking spray so it comes out easily)
- 1 C dark chocolate chips
Instructions
- Line two jelly roll pans with parchment paper
- Whisk the flour, baking soda, cayenne, salt, and cinnamon together
- Cream the butter and sugars in a standing mixer until light and fluffy
- Add egg and vanilla and beat until fully incorporated
- Slowly add the flour mixture on medium-low speed until a loose dough forms
- Add the peanut butter on low speed until incorporated, then mix in the chocolate chips
- If you have a large cookie baller, use it to create 12 even balls on the two baking sheets, if not, use your hands. Then cover with plastic wrap and refrigerate for an hour
- Preheat oven to 375° F
- Bake cookies 16*20 minutes, switching racks and directions halfway through
- Remove cookies from oven and leave on pans for about 2 minutes before removing to a wire rack to cool
